A great dish doesn’t always have a lavish background. Many popular recipes are made with accessible and inexpensive ingredients. The story behind potato tortelli is not a legend, but one of episodes, laughter and serendipity. If it were a book, its chapters would tell of dinners with school friends, a surprise birthday party, a first date, or that festival when we nearly showed ourselves up.
